“When it comes to Asian ingredients, I enjoy the spiciness, freshness and of course the endless combinations,” says Julian Cohen, group food and beverage manager for Thai Africa Restaurants (011 789 1972). Here’s his menu for an exotic oriental feast
INGREDIENTS
- 10 potatoes, peeled
- 100g butter
- 100ml milk
- 50ml cream
- 15–20ml wasabi powder
- 3ml salt
METHOD
1. Boil the potatoes until cooked, drain and add the butter, milk and cream. Mash until smooth and creamy.
2. Season with salt and add the wasabi powder to taste, stirring well.
