A balanced Brekkie. Try this healthy and diabetic-friendly toasted crunchy clusters breakfast to help you start the day right! Oats are well known for their health benefits and good influence on blood sugar regulation – this recipe is full of nutrients and flavour.

 

TOTAL TIME 1 hour 15 min + cooling | SERVES 8  

INGREDIENTS

  • 1 cup rolled oats
  • ⅓ cup almonds, roughly chopped
  • ¼ cup sunflower seeds
  • 2 tbsp flaxseeds
  • 2 tbsp sesame seeds
  • 1 tsp ground cinnamon
  • ¼ cup honey, warmed

SERVE FOR BREAKFAST

  • 2 green apples, unpeeled, thinly sliced 
  • 300g red grapes, halved 
  • 1 ⅓ cup double cream yoghurt 

 

METHOD

PREHEAT the oven to 150°C. Line a shallow baking tray with baking paper.

COMBINE oats, nuts, seeds, cinnamon, and honey in a bowl and mix to coat evenly. Spread evenly over the prepared tray.

BAKE for 55 minutes or until golden, stirring halfway through cooking; cool. Break the oat mixture into clusters.

TO SEVRE, divide the fruit, yoghurt, and crunchy clusters between eight breakfast bowls. 

FOOD TEAM TIP:  The clusters will keep in an airtight container at room temperature for up to 2 weeks. Enjoy as a protein-packed on-the-go snack.
