STEAMED SEASONAL VEG WITH LEMON ZEST

INGREDIENTS

  • vegetables of your choice, including long-stemmed broccoli, broad beans, French beans, baby corn and
  • baby spinach
  • 100g butter
  • Maldon salt
  • zest of 1 lemon

METHOD

1. Steam the broccoli, beans and corn. When cooked, rinse them under cold water to retain their colour.
2. Melt the butter in a flat pan. Add the baby spinach and steamed vegetables and heat through.
3. Sprinkle with salt and lemon zest before serving.

 

This recipe serves 6 – 8.
