INGREDIENTS
- 1 sweet melon (spanspek)
- Old Brown sherry
- 18 slices Parma ham
METHOD
1. Cut some of the melon into slices and using a melon baller make balls from the rest.
2. Place in a dish and pour over a generous amount of Old Brown sherry; leave to soak overnight.
3. Wrap slices of Parma ham around the slices of melon and arrange them on a platter with the melon balls.
This recipe serves 6.
