INGREDIENTS
3 avocados
2T olive oil
squeeze of lemon juice and zest 1 lime
1t soya sauce
drop honey
6 Romanita tomatoes, chopped
1 small red onion, sliced
1 red chilli deseeded and sliced diagonally
1 green fresh jalapeño, deseeded and sliced diagonally
1T freshly chopped coriander leaves
1t chopped dill
crushed peanuts and toasted sesame seeds (optional)
METHOD
- Dice the avocado into chunks and place in a mixing bowl.
- Drizzle over the olive oil, lemon juice and zest, lime juice, soya sauce and honey.
- Add the chopped vegetables and herbs and mix lightly. If you decide to add the crushed peanuts or sesame seeds, add half when mixing and the other half as garnish.
