INGREDIENTS
- 500g natural almonds
- 2 cloves garlic, very thinly sliced widthways
- juice and zest of 2 large lemons, finely grated
- 15ml flaked sea salt
METHOD
1. Preheat the oven to 170°C. Combine the almonds, garlic, lemon juice and zest in a bowl and allow to infuse for 15 minutes.
2. Transfer the mixture to a roasting pan, scatter over the flaked sea salt and roast, stirring occasionally for 40 minutes or until the mixture is dry and crisp. Cool.
Cook’s tip: Serve these lemon almonds as part of a selection of mezze or with drinks. To complete the mezze snack table, add cheese straws, bowls of olives and sliced biltong.
This recipe makes 3 cups of almonds.
