Terri Coyle of boutique eatery JennaVIVA (jennaviva.co.za) suggests welcoming guests with one of her signature ice ice-cold mojito coolers to set the mood for a leisurely lunch

INGREDIENTS

  • 6 cups crushed ice
  • 6 regular tots white rum
  • 3 small tins lemonade
  • 3 small tins soda water
  • 6 handfuls of fresh mint
  • salt, fresh mint and lime slices, to serve

METHOD

1. Mix the crushed ice, rum, lemonade and soda in an iced jug. Crush the mint with a mortar and pestle and add to the mixture.
2. Dip the top edge of each cocktail glass into the mixture, then in salt to coat the rim.
3. Serve the cocktails garnished with mint leaves and slices of lime.

This recipe serves 6.
