BOBOTIE

Try these delicious and traditionally South African dishes

INGREDIENTS

  • 1 piece of Sasko Everyday/Low GI White Bread
  • 250ml milk
  • 2T oil
  • 2 small onions (chopped)
  • 2T garlic & ginger paste
  • ½t salt
  • 1T sugar
  • 1t turmeric
  • 1T medium strength curry powder
  • 1T garam masala
  • 500g mince
  • 1T tomato Paste
  • 2T apricot chutney
  • 1T white vinegar
  • 60ml raisins (optional)
  • 2 eggs
  • 3 bay leaves
  • Rice and chutney to serve

METHOD

  1. Preheat the oven to 180C
  2. Pour the milk into a bowl and put the piece of bread into the milk to soak
  3. Put a large saucepan on medium heat
  4. Drizzle in oil and fry the onions until translucent (about 5 min)
  5. Add the garlic and ginger, salt, sugar and all of the spices and fry for a minute or two
  6. Add the mince and fry until browned (about 5-8min)
  7. Squeeze excess milk from the bread (Keeping left over milk aside for later)
  8. Break apart and add to the mince along with the tomato paste, chutney, vinegar and raisins
  9. Simmer for 15 minutes to reduce
  10. Remove from the stove and transfer to a small oven proof dish
  11. Stir together remaining milk and eggs and pour over the mince
  12. Top with bay leaves and bake in the oven for approx 35 minutes until the topping is set and just browned
  13. Serve with rice and chutney
