Roasted Dill Potatoes

Dill, garlic, and butter accentuate your potatoes’ rich, earthy flavour. If you grow your own herbs, feel free to add homegrown dill for an even fresher meal.

Ingredients

  • 6 quarter-chopped homegrown potatoes
  • 1 tbsp fresh chopped dill
  • Juice from 1 lemon
  • 3 cloves garlic, minced
  • Melted butter to cover

Place chopped potatoes in a large mixing bowl and add all ingredients except for fresh dill and lemon juice. Toss and mix until potatoes are completely coated. Pour onto a large baking tray and bake in a preheated oven at 220 degrees until golden brown and crispy. Remove from oven, add fresh dill and lemon juice evenly on top, and serve hot.

Classic Baked Potato

Simple, delicious, and surprisingly nutritious, baked potatoes make great side dishes or even appetizers. These savoury treats have fluffy insides and crispy skins and taste even better when you’ve grown the potatoes yourself.

Ingredients

  • Homegrown potatoes
  • Olive oil
  • Butter to serve
  • Salt

Poke holes in your potatoes using a fork and rub them in olive oil, sprinkling with salt. Stick them on a baking tray and bake in a preheated oven at 200 degrees for 50 minutes. Take them out and slice them down the middle. Melt butter inside each, then add your desired toppings for a personalised baked potato.
