Salmon & spinach with tartare cream

Versatile and easy to make, with a cooking time of just 20 minutes, this brain-boosting recipe is the perfect choice for quick study breaks.

Ingredients:

  • Skinless salmon fillets
  • A bag of spinach
  • 1 tablespoon sunflower or vegetable oil
  • juice lemon
  • Chopped parsley

Cooking method:

  • Heat your oil in a pan, seasoning the salmon on both sides. You can then fry the salmon for 4/5 mins each side until golden. Leave to rest on a plate while you start the spinach.
  • Add spinach leaves to your hot pan, season well, and add lemon juice. Cover and cook for about 1-2 minutes, stirring once or twice to avoid burning the spinach.
  • Spoon the spinach onto your plates, then top with the salmon. Top it off with lemon juice and parsley for that finish taste. You can also opt for low-fat crème for that extra flavour.

Easy cheesy frittata

Eggs help with memory recall and are a complete protein containing iron and vitamin A, which are both important for growth, repair, and mental development.

Ingredients:

  • 4 eggs
  • 100g feta cheese
  • 2 spring onions
  • Slices of ham
  • Frozen peas

Cooking method:

  • Make sure to set your stove to 180. Cut your spring onions and put them in a bowl. Add the peas to the bowl. Break your feta cheese and add it to the bowl.
  • Chop up pieces of your ham, adding it into the bowl with onion and your cheese.
  • Crack your eggs into a bowl and, whisk the eggs together with everything in the bowl.
  • With everything mixed into the bowl, cook for 10 to 15 minutes or until everything is set.
  • Serve with salad, crusty bread or any side dish of your choice.
