With the spring school holiday approaching, grab your kids and hit the kitchen with these easy and delicious recipes that are guaranteed to put a smile on their faces.

 

From sweet to savoury, these school holiday snacking recipes covers all your basis. This will ensure a way of bonding with your kids with food.

Chewy choc-banana cookies

Cookies are a perfect way to get started with those school break recipes. This wonderful allergy-friendly recipe uses banana instead of egg and spelt flour instead of regular wheat flour—a healthy but sweet treat for your young ones.

Ingredients:

  • 110g unsalted butter, softened
  • 1cup honey
  • 1 tablespoon of vanilla extract
  • 1 over-ripe banana, mash it
  • 1 cup spelt flour
  • 3/4 cup rolled oats
  • A cup of coconut
  • 1/4 cup dark chocolate pieces

Instructions:

1. Preheat your oven and immediately line your baking tray with baking paper and non-stick spray. Mix your butter, honey and vanilla until creamy. Then stir in the mashed bananas and add your sifted flour, oats and coconut. Stir well to combine and finally add your chopped chocolate pieces.

2. Roll tablespoons of the mixture into balls and place them on your prepared trays and be sure to place them about 3cm apart. Flatten them for cookies and bake for 10-12 minutes until golden and cooked.

3. Once baked, cool them before serving to your kids.

Sweet potato, spinach and feta muffins

If you’re trying to sneak some vegetables into your child’s diet, these savoury muffins are a great option.

Ingredients:

  • 1 cup plain flour
  • 40 g of chopped spinach leaves
  • 2 shallots, thinly sliced)
  • 100 g feta
  •  A cup of sweet potato purée
  • 2 eggs (beaten)
  • 2/3 cup plain Greek yoghurt
  • 50 g butter (melted)
  • 1/4 cup of grated parmesan

Instructions:

1. Lightly grease your muffin pan. Mix and stir your ingredients in one bowl. Stir in your spinach and half of the feta cheese. Whisk them all in the bowl until well combined.

2. Spoon into your prepared muffin pan and sprinkle with feta or parmesan for that cheesy finish. Bake for 25-30 minutes until cooked, test the insides of the muffin with a fork to check if they are well baked inside.
