This easy, summer recipe is ideal when you’re having friends over. The fresh fruit is light and refreshing while the butterscotch sauce adds a sweet and sticky taste
INGREDIENTS
- 60g butter
- 75ml brown sugar
- 125ml golden syrup
- 175ml double cream
- 5ml vanilla extract
TO SERVE:
fresh strawberries, cherries, pomegranate seeds and berries of your choice
METHOD
- To make the butterscotch sauce: melt the butter, sugar and golden syrup together in a saucepan on top of the stove until the sugar is dissolved, about 5 minutes.
- Slowly add the cream and vanilla extract while stirring continuously until well combined.
- Remove from the heat and cool.
- Pour into little ramekins and serve with a selection of fresh fruit and berries.
