INGREDIENTS
- 1 ½ cups pumpkin puree
- ½ cup pure maple syrup
- 1t cinnamon
- ¾ t ground ginger
- 1/8 t ground cloves
- pinch freshly ground black pepper
- 15ml cognac
- 3 whole eggs beaten
- 1 egg yolk beaten
- 1 cup cream
- 1t pure vanilla
- pecan halves
- 1 x 28cm prebaked tart shell
METHOD
1. Combine pumpkin puree and maple syrup.
2. Add spices, cognac, eggs, vanilla, egg yolk and process until smooth.
3. Mix in the cream.
4. Pour into pastry shell and bake in moderate oven until set (centre should be slightly wobbly).
5. Cool and decorate with glazed pecans.
